On the 40th anniversary of the Pink Lady™ Apple variety, I was commissioned to develop some recipes that celebrate this world-favourite apple. It’s sweet, crunchy tart taste matches deliciously with ingredients that are creamy, rich and salty; queue a slice of brie, thin slices of Pink Lady™ Apple, a thin wrapping of savoury and salty Jamon, all bedded down on a crunchy witlof leaf garnished with a scattering of thyme leaves. It’s a perfectly balanced snack that is quick and easy to put together for all ages.

(Serves 4 as a snack)
1 witlof or baby Cos lettuce heart
1 Genuinely Southern Forests Pink Lady™ apple, quartered, cored and sliced
200 g Brie, sliced
100 g Jamón or Prosciutto, thinly sliced
1 tsp lemon thyme leaves
freshly cracked black pepper
- Lay a piece of Brie and 2 slices of Pink Lady on top of a witlof leaf.
- Wrap with a slice of Jamón and serve garnished with a little lemon thyme and freshly cracked black pepper.
