🥘SPICED TOMATO & POTATO BAKE Back in 2020, wh 🥘SPICED TOMATO & POTATO BAKE Back in 2020, when we were all adjusting to the new normal of living during a pandemic, I was commissioned by WA Potatoes @wapotatoes_ to develop 10 recipes costing no more than $10 to make. I’m certain you could no longer make this for $10 but it’s still a trans-seasonal winner and something I enjoy whether in Norway or Australia. 🥘Here’s the recipe: (Serves 4) 1 lrg onion, sliced 3 tbsp olive oil 1 ½ tsp cumin seeds 2 tsp mild curry powder ½ tsp dried chilli flakes 1 ½ tsp salt 850 g (4 med) red potatoes (Desiree, Rodeo or Laura), washed 300 ml thickened cream 1 x 400 g tin chopped tomatoes 1 ½ tbsp thyme, chopped METHOD 🥔Preheat oven to 200˚C 🥔Using a large heavy stove-to-oven frying pan, gently fry the onion in 2 tbsp of the olive oil with the cumin seeds, curry powder, chilli flakes and ½ tsp salt until caramelized and softened. 🥔Reserve to the side in a separate bowl. 🥔Thinly slice the potatoes (skin on) and place in large bowl. 🥔Spoon ¾ of the reserved spiced onion mix, remaining 1 tsp salt, thickened cream and 1 tbsp of the chopped thyme over the potatoes and mix well. 🥔Evenly lay half the potato mix back into the frying pan or a medium sized deep baking dish. 🥔Evenly spoon half the tinned chopped tomatoes on top. 🥔Evenly lay the remaining half of the potato mix on top, spooning the remaining tinned chopped tomatoes on top. 🥔Scatter over the remaining thyme and then drizzle over the remaining tablespoon of olive oil. 🥔Bake for 60 minutes until the potatoes have softened and the top a little caramelized. 🥔Serve with fresh cracked black pepper.

Thank you to the Bárru Language Group, Lofoten Sámi Association and @ingunn_rasmussen for the opportunity to learn how to make a traditional Sámi coffee bag. The indigenous Sámi people from Scandinavia traditionally used (and still use) leather bags made from their reindeer to store meat, coffee, salt and flour. Just one of their many exquisite hand craft traditions.
It’s been awhile but hei hei from Norway! 🇳🇴 As my work @holmenlofoten includes social media my personal posting has dropped off. Screen fatigue is very real but as I also enjoy seeing your posts thought I’d share a few pics from yesterday’s visit to the Viking Festival here in Lofoten and a recipe. Maintaining restraint around buying yet more yarn, I bought a kilo of honey instead. The thin justification being a sore throat but also a great love for something that’s older than records can measure which tastes directly of its environmental source. This one an absolute beauty. Fully perfumed with spring / summer mountain blossoms. In raking through my old weekly recipes that I used to have published weekly in The West Australian, now over a decade ago, I found this one. It’s impossible to cram everything seen, felt an It’s impossible to cram everything seen, felt and laid to memory over a recent trip to the far north of Norway in a 30 second Reel, but here’s an attempt. It started with another visit to the Viking Museum @lofotrvikingmuseum. Seeing the volunteers in costume busy with crafting daily essentials makes me want to find a tardis. Onto Kabelvåg for The Espolin Gallery prior to boarding the Hurtigruten Coastal Express @hurtigruten in Svolvær bound for Kirkenes. Farewelled by the 4.5 metre tall ‘Fiskerkona’ sculpture depicting a fisherman’s wife scanning the Vestfjord. After a narrow passage into the famous Trollfjord, the ship docked at several ports along the magnificent fjord-filled coastline. Mostly cloaked in low cloud until Honninsvåg. Europe’s northernmost town. Disembarking early on a Sunday morning, Kirkenes lay dormant apart from a memorial board for killed Russian opposition leader Alexey Navalny positioned directly opposite the Russian Consulate. From the Russian border, wide, open birch-forest and swampy covered lands ushered the drive through Finland back into Norway for a night’s stay in Karajsok. Home of the Sámi Parliament of Norway and Sámi Museum featuring beautiful examples of Sámi duodji (hand-craft). Onto Alta to see 2000 to 6200 year old rock carvings showing the life of hunters and fishermen and a memorable night’s stay at Trasti & Trine @trastiogtrine Back to Tromsø and then onto Senja. Norway’s second largest island with sky-scrapping mountains, spectacular fjords and small communities where a late fish & chip dinner at The Fat Cod @campsteinfjord deliciously sated an hours-long hunger. Driving further south, an impromptu visit to @ekoloialen led to an invitation for a picturesque walk into the woods to a family cabin followed by a final stay in Henningsvær. A journey that covered many impressions of great contrasts and a test for a new old vehicle, recently purchased.
